Sweet syrup and elderflower are balanced beautifully with tart passionfruit and bright citrus notes, creating a delightfully rounded cocktail that looks as pretty as it tastes.

Ingredients
- 50ml Pink Granite Gin ‘The Stonemason’ (alternative gin varieties can be used instead)
- 25ml Passoa
- 7.5ml Vanilla syrup
- 25ml Lemon juice
- 4 dashes orange bitters
- Elderflower tonic water to top up
- Garnish: ½ Passionfrui
Preparation
- Chill a tall 12oz highball glass with ice and water
- Pour all the ingredients (except the Elderflower tonic) into a cocktail shaker with ice cubes. Shake well for 3 to 4 minutes until the cocktail shaker is visibly frosty.
- Discard the ice and water from the glass
- Fill with fresh ice cubes
- Strain and pour the drink over the ice
- Top up with the elderflower tonic water
- Garnish with the fresh passionfruit
