When we think of magical experiences and memorable moments, it often involves gatherings with our friends and family, savouring good food and wine; a table filled with laughter and love is the key ingredient.
Someone who knows more than a little about the alchemy of pairing exquisite dishes with exceptional wine is Alice Paillard, daughter of the eponymous Bruno Paillard and managing director of the Maison of the same name.
Exclusively, from her kitchen in France, Alice agreed to prepare one of our special recipes that we share with you in each issue. From the UK to France, we all worked together with our talented chefs and Alice to bring you this beautiful dish to try at home and, of course, Alice recommended the perfect wine accompaniment!
“As a vintage alternative, the ampleness of our Assemblage 2012 with its strong character will gladly respond to power of the spices, madeira and darker tones of the dish,” says Alice.
Pairings chosen by Alice are Cuvée 72, which is an older brother to their signature Première Cuvée, with an additional 36-month bottle ageing and the most wonderful added complexity, gained with a dollop more patience, which will perfectly pair with the partridge.
Alice explains, “This recipe clearly has a great variety of flavours, that make it a 360 degree tasting experience! This will work a charm with our multi-layered multi-vintage Cuvée 72 that offers, through its double maturation process, a creamy texture and a generosity that would greatly contribute to the harmony of the plate.”
