Cellar Secrets
There is a moment in every fine hotel that many guests never experience. Beyond the restaurant, away from the warmth of the dining room and hidden behind heavy wooden doors, lies a quieter world where time moves at a different pace.
It is here, among rows of carefully resting bottles, that every great wine begins the final stage of its journey before arriving at your table. For the wine enthusiast, a cellar is far more than a place to store bottles: it is a carefully balanced environment where temperature, humidity, darkness and stillness work together to protect years of craftsmanship.
Long before the cork is eased from the bottle and the first aromas begin to emerge, the wine has already completed an extraordinary journey. The vineyard, the harvest, the winemaker’s skill and, finally, the patience of careful cellaring all contribute to what eventually fills the glass.
The image of the traditional wine cellar has changed remarkably little over the centuries. Stone walls, cool air and rows of quietly ageing bottles have long been associated with the great houses of Europe, where underground vaults provided naturally stable conditions throughout the seasons.
Before refrigeration or modern climate control existed, these subterranean spaces offered exactly what fine wine required: consistency. Protected from sunlight, vibration and dramatic temperature changes, wines were allowed to mature gently, developing the complexity and balance that can only come with time.
While technology has transformed many aspects of hospitality, the principles of storing great wine remain almost entirely unchanged. Modern wine cellars may benefit from discreet climate control and carefully monitored humidity, yet they continue to honour the same fundamentals that have guided generations of collectors and sommeliers. A constant temperature of around 12 to 14 degrees Celsius allows wine to age gracefully, while gentle humidity helps preserve the integrity of the cork. Bottles are laid horizontally to keep the cork naturally moist, preventing unwanted air from entering and ensuring the wine continues to evolve exactly as the winemaker intended.
It is often said that great wine rewards patience, and nowhere is that more evident than in the cellar. Here, there is no rush. Some bottles will rest for years before reaching their perfect moment, gradually revealing deeper aromas, softer tannins and greater complexity. Others are chosen to be enjoyed while youthful and vibrant, celebrating the freshness and energy that define their style. Understanding that difference is one of the quiet skills of a talented sommelier.
“Our cellar is more than a collection of fine wines,” explains our sommelier. “Every bottle has been selected because it has a story to tell. Some reflect iconic vineyards with centuries of history, while others introduce our guests to exceptional producers they may never have discovered. The privilege of our role is matching the right bottle to the right occasion, creating memories that remain long after the final glass has been enjoyed.”
Selecting wine is often thought of as a science, yet it is equally an art. Knowledge undoubtedly plays an important role, but instinct, experience and an understanding of people’s tastes are just as valuable. A memorable bottle is not always the oldest or the rarest. More often, it is the one that perfectly complements a meal, celebrates an occasion or simply encourages conversation around the table.
Our carefully curated collection reflects this philosophy, bringing together celebrated names alongside hidden gems, each chosen for its quality, character and ability to enhance the dining experience. Whether discovering an elegant white with vibrant citrus notes, a beautifully structured Pinot Noir or a rich, full-bodied Bordeaux, every bottle has earned its place within the cellar through exceptional craftsmanship and provenance.
Our sommelier shares a selection of personal favourites from the collection. Alongside tasting notes and food pairings, each bottle represents another chapter in the remarkable story of wine, from vineyard to cellar and finally to your glass.
Because while the finest wines are made in the vineyard, they are perfected by time, cared for in the cellar and brought to life when they are shared.
