Oysters and Cloudy Bay

Delicate fresh oysters and crisp sparkling wine have long been revered as the pinnacle of decadent dining. Their unique and luxurious flavor combination has earned them the rightful status as the king and queen of culinary indulgence and the perfect pairing to signify the grandest occasions. We explore our love affair with this heavenly union.

The Channel Islands are renowned for temperate climates that nurture the freshest organic produce, while its crystal-clear waters provide a bountiful paradise for seafood lovers. Throughout the seasons, sweet crabs and lobsters adorn plates island-wide, but for the most decadent gourmet experience, an icy platter of delicately-shucked oysters, paired with a crisp and elegant sparkling wine takes the culinary crown.

The seas around the Channel Islands have a proud reputation for cultivating the world’s finest oysters, thanks to the outstanding purity of this unique marine environment and natural filtration of clean, regular tides.

The plump, succulent oysters that are lovingly nurtured and harvested here are famed for their distinct, mineral-rich qualities and delicate, salty flavour that has earned them an enviable reputation amongst discerning diners from all corners of the globe.

Finding the perfect wine for such a celebrated delicacy is no small challenge, but the mild climate of the southern hemisphere, coupled with the expertise and proud heritage of the winemakers at Cloudy Bay, combine to provide a heavenly flavour match.

The wine is named after Pelorus Jack, a famous dolphin who escorted ships through a dangerous stretch of the Cook Strait in the late 19th and early 20th century

Diligently crafted using the time-honoured méthode traditionnelle of Champagne, Pelorus has been setting the standard for New Zealand sparkling wine for nearly 40 years, making it one of the most highly-regarded in the new world. Now, thanks to its elegance, finesse and complexity, its star is on the rise further from home.

Characterised by aromas such as citrus, apple and yeasty fresh bread, its palate boasts notes of orchard fruits, white flowers and toasted almonds that make it an ideal accompaniment for delicate shellfish and the perfect flavour balance for the Channel Islands’ beloved oysters.

While the sensitive method of Pelorus’ production, using grapes that have been sustainably cultivated on the land, makes it an ethical match for our organic oysters, the pair also share an indelible connection to the sea. The wine is named after Pelorus Jack, a famous dolphin who escorted ships through a dangerous stretch of the Cook Strait in the late 19th and early 20th century – safeguarding the seas and those who voyaged upon them.

Hand Picked Hotels and Cloudy Bay are teaming up this summer to offer guests an exclusive opportunity to enjoy the unique pairing of fresh oysters and sparkling Pelorus. Available at Fermain Valley Hotel, Guernsey, throughout the summer, it’s an experience not to be missed.
